Legend says that, in 1670, the Marquise de Sablé offered a plate of buttery, crumbly biscuits to the King's brother, who found them particularly delicious. These little biscuits quickly became firm favourites in the royal household, taking the name of the town in which they originated, Sablé sur Sarthe.

The biscuit sablés recipe passed through generations over the centuries, and has become a classic French treat that every grandma keeps in her cupboard. They are an essential side for every café au lait or chocolat chaud

In 1962, a pastry chef opened the Biscuiterie de Sablé-sur-Sarthe, desirous to perpetuate this historical recipe while using pastry butter and local ingredients only.
