Slowly fermented in an oak barrel for 3 weeks, Martin Pouret's vinegar making process reflects a secular tradition.  The Merlot variety comes from the French 'Merle' (blackbird) whose black feathers remember the dark color of the grapes. 

 

With its fruity and warm notes, this vinegar is a perfect base for marinades or to deglaze beef meats.
